Story
Caparao National Park in Brazil has become a well-known center for the production of extremely high-quality specialty coffees in the last decade. In this region, growers are focused on producing the best coffees, which is already reflected in the many awards and recognitions they receive in various competitions and evaluations.
This micro-region is located next to the Brazilian National Park, which surrounds the third highest mountain in Brazil, Pico de Bandeira (2892 m above sea level). The region is characterized by small family farms, a traditional approach to coffee production and top quality coffee with a unique aroma. The name Caparao comes from the language of the Tupi Indian tribe and translates as "water that rolls stones". Mount Caparao is truly rich in crystalline water sources that take care of the necessary watering of the coffee bushes. As it is part of a national park, all agricultural practices are in harmony with nature.
When the coffee cherries reach the desired humidity, they are hermetically packed for two months, which balances out the flavors and stabilizes the water activity. Afterwards, the cherries are used to fertilize the soil, while the coffee beans are sent to the port of Koper. Instead of forming large homogenous lots by machine harvesting, Coletivo coffee is created by combining smaller lots, creating a unique sensory profile.
Coletivo coffee proudly reflects the terroir of the Caparao mountain microregion, respects nature and expresses elegance in the cup. Its clean and stable sensory profile with a medium-bodied body evokes flavors of caramel, nuts and honey. Light roasting brings out the complexity of the flavors with a gentle touch of citric acid. Darker roasting creates a stronger body with a rich chocolate flavor.
